Ingredients for making Baião de Dois with dried meat and curd cheese:

 250 grams of string beans, green or black-eyed

 300 grams of desalted dried meat

 200 grams of pepperoni sausage

 1 cup of chopped bacon

 1 cup of raw parboiled rice

 1 tablespoon of oil or olive oil

 3 chopped garlic cloves

 1 large chopped onion

 200 grams of curd cheese

 salt, black pepper and spicy paprika (to taste)

 cilantro and chives (to taste)

 1½ liters of boiling water (approximately)

How to make Baião de Dois with jerked meat and curd cheese:

Desalt the dried meat into small pieces and set it aside. Soak the beans in water for at least 4 hours. After this period, bring the beans to a boil and discard this water.

Tip: To desalt the dried meat, boil it 2 or 3 times, always changing the water, or let it soak with water in a bowl, changing the water 3 or 4 times every two hours.

Saute the onion and garlic with oil or olive oil in a deep saucepan. Add the minced salted meat and let it simmer for a few minutes until lightly browned.

Tip: If you have lard or bottle butter, give preference to preparing this stir-fry, as the flavor will be more accentuated.

Add the drained beans, salt, black pepper and paprika in the pan. Add boiling water and cook for approximately 35 minutes.

Tip: The amount of water may vary depending on the beans used, as well as the preparation time.

Add the rice to the cooked beans (you will probably have some al dente beans) and cook for another 15 minutes or until the broth dries.

Tip: From time to time, stir gently to prevent the baião de two from burning. When it's almost dry, taste the rice and beans to make sure they're cooked through. If necessary, add another 1/2 cup of hot water to finish cooking.

When the baião is cooked, add the chopped green scent and small pieces of curd cheese inside it, mixing gently. Cover the pan and wait a few minutes for the cheese to soften next to the baião de two.

Tip: To make the baião de two more appetizing, saute pieces of curd cheese with butter or olive oil and decorate the dish just before serving!
